  1. 1/3 cup olive oil,
  2. 2 tablespoons fresh lime juice,
  3. 1/2 teaspoon finely grated lime rind
  4. 1 garlic clove, crushed
  5. 1 small red chilli, deseeded, finely chopped
  6. 1/2 teaspoon caster sugar
  7. 300g button mushrooms, quartered
  8. 200g sundried tomatoes
  9. 1/2 red onion, sliced
  10. 1 avocado, peeled, chopped
  11. 80g baby rocket.

The instruction how to make Marinated mushroom & avocado salad

  1. Whisk 1/3 cup olive oil, 2 tablespoons fresh lime juice, 1/2 teaspoon finely grated lime rind, 1 garlic clove, crushed, 1 small red chilli, deseeded, finely chopped, 1/2 teaspoon caster sugar. Season.
  2. Place 300g button mushrooms, quartered, in a large bowl. Add the dressing and toss until well coated. Cover and place in fridge 1-2 hours to marinate.
  3. Add 200g sundried tomatoes, 1/2 red onion, sliced, 1 avocado, peeled, chopped, and 80g baby rocket. Toss to combine just before serving.
